Monitoring IT of meat on your roti


 
Thank you all, I was on the fence but your endorsement push me over the edge. Especially the picture of the turkey breast!!!
 
So how do you set up your coals to cook that? Did you use charcoal baskets directly under the bird?
I place coals on both sides of the spit, similar to what is depicted in this pic from a Weber manual. There could be occasion or folks who place coals only on one side. There is no reason not to use the baskets but I just never developed the habit of using them often when I started out.
