After reading the modifications section, there are a few things that really interest me.

1. Replacing the water pan with the 2 gallon
Brinkman Charcoal Pan. Wal-Mart has these
for $3.96.

2. For Grilling nice and hot, adding a
replacement charcoal grate for a Weber
22-1/2" Kettle Grill. Lowe's has these for
$9.99.

3. Adding a 13-1/2" replacement charcoal
grate for a Weber 18-1/2" Kettle Grill to
the bottom of the charcoal ring to criss-
cross with the other to keep the coals
from falling through before they are done.
(Especially when using Lump coal). Lowe's
has these for $7.99.

4. Adding knobs to the cooking section.

Does anybody have any advice for or against these modifications? The only question I really have is regarding the knobs on the cooking section. What type of knob works best? Wood? Ceramic? Metal? And if you recommend a certain type, can you tell me what size stainless steel panhead screw to use?

One other question: What seems to be the most popular way to run the polder probe through into the smoker. There are several different ways, but maybe somebody could offer their advice on the "recommended" way to do this?

Something I learned the hard way....

Despite the Polder's back-side magnets, don't put the Polder on the WSM.

I'd like to see a mod where someone creates a device that attaches to the WSM that the Polder can be safely attached to.
