Picked up this beautiful 7lb slab of belly from my favorite meat vendor

Into the cure for 7 glorious days

After the brine and a few days drying in the fridge

Onto the

and the opportunity to try out my new CyberQ WiFi from our friends at BBQ Guru

After a roughly 3.5 hours

Should last us for a little while

Looking forward to some carbonara pasta tomorrow night.

CyberQ WiFi preformed as expect and kept temps as they were set. With a 4 month old in the house in was nice not to having to run up and down the stairs checking on things, could just watch on-line. Screen shots arnt' very exciting but hey, it gets the job done. Was very easy to connect though Adhoc and didn't take much to connect via infrastructure mode.

Would be cool if someone would make a Stokerlog program for the Guru unit.

Have a overnight cook planed tomorrow night as i'm making pulled pork for my office on Friday of 20ppl. Sure it will work spot on for that too.

My mouth dropped when I saw the pic of the sliced stuff. Wow. You rock. Great job. At first I thought the vac-packed stuff was labeled with the days for eating. May 15, May 16, May 17...
