Mississippi Mud Spuds!

I modified this slightly from the “Allrecipes” method, using leftover potatoes.
This will be a “guideline” recipe as I abhor most hard and fast designs unless it’s baked goods!
Diced potatoes (mine were leftover roasted baby yellows) if using raw, I would probably use 1/4” dice.
Small red onion finely diced.
Garlic, chopped….well, I used three cloves for maybe two cups of potato.
Mayonnaise, (additional Dukes bacon Mayo was nice!)
Grated cheese
Chopped bacon!
It’s really pretty straightforward, mix all the stuff and slide it into a greased baking dish and bake!

I made it with about 1 1/2 cups of potatoes, this one worked really better than I’d expected!
I think it would be just dandy on the kettle alongside some nice roast of beast or a meatloaf!
