Any one from this list planning on attending the Minnesota in May cookoff on May 17-18th in Cambridge, MN?

I will be there, along with Buzz from Wisconsin and Darwin from International Falls, plus, of course wife and daughter (Marg and Anna). Team name is Big Daddy & the Kid. Look us up and try a sample of my latest incarnation of pulled pork.

I learned from Kings Mountain in NC to go a little sweeter (including injecting/marinating). Test results this weekend were awesome. Used Stogies MIM injection as a marinade. Other than adding just a little heat, it is a perfect flavor.

Also, for fun, tried Carson's Rib recipe (in which you sauce the ribs in the beginning). Never had any problems with blackening sauce but could not get them suckers tender.

Temp was pretty constant around 240, but toothpick test (and old faithful meat pulling up on the bone test) did not pass. Finally pulled them after 8 hours and finished in the oven the next day. Fun experiment, but not ready to commit it to my competition repetoire.

I'll be at MIM to judge there. I considered competing there this year but time off from work is at a premium right now so I even wouldn't get to the site until late Friday night. I'll compete some other day when I've got a more time to enjoy the event.

Looking forward to meeting you and anyone else from the list who are attending.
