Minimum & Optimum Resting Times for Pork Butts

If serving time is not an issue, what are your thoughts on:

The minimum amount of time pork butts should rest before pulling?

The optimum amount of time?

Hi Rita,

I agree with Bryan. It seems about an hour wrapped off the grill (and I never wrap on it) is about the right time. After that though, it hasn't made much difference that I can tell. I've pulled from one hour to twelve, and after the one, it doesn't seem to matter.

Pat, I've pulled when the meat was barely lukewarm and it pulled just fine and was easier on the hands too. It'll be warmer tonight, but have to do it now.

If you pull too early then alot of the juice runs out of the meat. When it cools down but still warm more of the juice stays in the meat. Kinda like leting a steak rest before slicing so you don't loose all that moisture. At one hour it's still really hot and alot of the juice runs out whereas with a 4 hr rest it pretty much stays in the meat. Since the mass is so much larger on a butt you need the extra time verses a thin steak.

I agree. I've pulled 2 of the butts so far (after 4 hours) and saved the drippings, which are almost 100% fat, little or no liquid.
