It turned out well, however it took longer than expected. I figured about 4 hours would do the trick, however it took 5.5 hours to reach 190 degrees internal. Had a thunderstorm to deal with mid cook and had to add some coals for the last hour, but overall it was quite tasty.
This was my first attempt at controlling the heat in the kettle for a low & slow cook. I was very suppressed at how well it worked. Almost the same as the WSM. It started out a little hot but soon had it under control and at about 250 degrees for the majority of the time.
I learned a lot and we ate well. Even the dog approved. By the time it was ready we were hungry! No time for pictures. lol
