All done. Turned out great. Flat is tender, but doesn't fall apart. The other part (I forgot the term for it) is tender and DOES fall apart. Tastes great...BUT....

I guess I'm a sauce guy. Again, the flavor is great by itself, but I guess I was wanting more sweetness. Anyone have any sauce (recipe or store bought) that would add a bit of sweetness? The spice (wet rub) is perfect, so I don't want it to add any to it.

Thanks to all on this board for all the help. My baby (WSM) fought through wind and rain last night and held around 225 all the way, and it really came down this morning! I'm so proud /infopop/emoticons/icon_biggrin.gif

If you want the best of both worlds try TexasBBQ Rub #2 it's sweet and spicy, no need for sauce.
I use the original on ribs and pork butt and #2 on chicken and brisket and love the stuff. check it out at www. TexasBBQ Rub.com...I have no connection with the company just love the rub
