middle of the night 1st smoke!!!

Got 2 butts on till. 4 a.m. because I couldn't wait for my therm.....rubbed with kosher salt per Kevin before rubbing with a Chris Lilly rub & injection. Steady temps all day & night....2 hours ish to check for bone pull out! Got a brisket & 3 racks of babys & 3 racks of St. Louis backs plus thighs & flat to trh this week. Newby but I have heart! I'll post pics........

John I can't believe you stayed up all night!!!! I get mine going about 4-5 PM the previous afternoon. Once the temps stabilize I hit the sack. Butts are real forgiving.You'll learn that it's hard to ruin butt. Not to say it can't be done,the finished window for them is a lot wider than say brisket. Congrats on your first smoke
