Happy Holidays and I hope everyone here at TBWBB is doing wonderful. Governor gave us off today as a Holiday so along with some last minute shopping, I decided to make Smoked Carnitas. This is a recipe @Rich G and I worked together on a few years ago and it is oh so good. I haven't made it in over a year as I have been just making pulled pork and then turning the leftovers into pork nachos, but this is some many levels above that. Cut a pork shoulder into 7 nice size pieces and rubbed with the Mexican seasonings we had in the house.

On to the kettle for a few hours with some pecan and peach wood.

Into the Dutch over with onions, garlic, citrus, dried chilies, salt, seasoning, and water, and back onto the kettle.

After a few more hours its done.

Pulled the meat and strained the broth. Pulled the pieces apart then into the skillet with the fat and a good bit of the strained liquid.

Made into tacos with rice, beans, cheese, red salsa and green salsa.

Oh my goodness they we were so good. My oldest daughter's boyfriend said it was the best meal he had had in a long time. We all thought they were out of this world. We can't wait for pork nachos with the leftovers on Friday.
