Meet and Greet Menu Help

So we decided to do a meet and greet the night before our wedding. Rather than going out I decided I wanted to do something in. With the wedding the next day neither my bride or I want to create too much work/cleanup for ourselves so no Qing that day. First thing that comes to mind is pulled pork sliders, easy to reheat. I also have about 10 lbs of pulled beef in the freezer (vac sealed). But I'm stuck on that. It wouldn't kill me to fire up a grill or two but we don't want to turn it into an epic Q. Any thoughts or suggestions?

Thinking we'll do a slaw, maybe a pasta salad too.

Any other ideas?

PS. I know this isn't really a Q thread but figured I'd get the most traction here, please forgive.
 
I've been doing little mini pizzas lately when a bunch of people are coming over. Usually they are done later in the evening as a snack for the people who just won't go home. Which are usually the people I don't want to go home.

You could use some of the pulled beef to make quesadillas.

My wife often takes leftover Q, puts it between tortillas (with cheese, cilantro or whatever you like), and "grills" it in a cast iron skillet on the stove until the insides are warm and the tortillas are crisp. Serve with good salsa. It is extraordinarily good.
