I was planning on putting these on around 11pm last night but plans change. So I got up around 4:40, mixed up a butt rub for jane, & had everything on @ 5:20. It's been on for almost 3 hours now running @ 225 lid.

I'm thinking 275-300 should allow the butts to finish at the 12 hour mark?

Also, what's a good sauce to go with this rub?
 
I usually allow 1.5 hrs per pound but I try to cook them in the 240 deg range. Sometimes they are right on, sometimes they are an hour or so early and sometimes they are an hour or so late...but, in my experience 1.5 hours is a good guide.

Even at 240 a 7# butt would "only" take around 10.5 hours. You've been at 225 for 3 hours so IMHO, bump it up to 300 and you should be good to go. If it gets done early you can always rest it in a cooler (better to be done early than late in my experience). 300 won't hurt it at all.

BTW, you named your butt Jane?

Around 6.5-7 hours, give or take, longer at 275.
 
I cook mine at between 225-250 and always finish in about 8 hours. Wrap them in foil and towels in a cooler for 3, and then pull.
 
Well the rub & lucky #5 worked out perfectly, I mean incredibly. WOW!

I smoked it with hickory, the rub excludes mustard like my last cooks, I made a few mods due to cabinet contents shortfalls, and it was the best cook out of 4-5 of these that I've done.

Really top notch meat. We had a great time too.
 
well it cooked between 225 & 300 most of the time, around 11 hours in it was only 176 & 185 so I left the door open, got rid of the ash & threw in a bunch more fresh competition K (first time with this charcoal, it was what costco was sellign yesterday).

Very happy with the burn time. I mean I started the fire around 4:40 am & didn't mess with it for at least 12 hours, and I might've been able to work past it.

about 7 hours in I took a ceramic pan & loosely covered it with foil to collect the juices - those along with the #5 sauce, well OMFG, it was the sh!t. So I guess there's my endorsement - try it, it's incredible.
