Just a question. Can you leave an instant read thermometer in the meat toward the end of cooking? I didnt think so but saw a buddy doing it this weekend on a pork shoulder. The meat turned out great but does that affect the accuracy?
 
Carl,I wouldn't leave my instant read thermometer in,it's not designed for that. There are roasting thermometers that you can leave in that give pretty quick readings. Was he using one of those,by chance?
