Meat juice Flare ups

I went to temp a chicken in my new WSM and juice ran out. I would’ve thought it would go straight into water pan but I guess it bypassed it (?) and got into coals which flared up. Any advice on handling these situations?
 
The grate is so far from the coals it shouldn't be a problem, same as a drum, but there all the fat drips onto the coals, a lot of folks like the flavor that produces
