Maverick Probe While Smoking

Guys (and gals), I promise I searched, but I couldn't find any results...

I have the Maverick 732, and I'm assuming I should just stick the probe in the center side of the flat right as I put it raw on the smoker, letting the cable run under the lid?

Do y'all set the min and max temps on yours, as well? Any recommendations for those?
 
Maury, I put my probe in the thickest part of the flat(close to the point). I've run the wires under the lid with no bad results. They won't crimp if that's what you are worried about.
 
This may be obvious, but you should put the probe sideways into the flat, not perpendicular.

Gary, I like the idea of a drip pan underneath the top rack -- I need to grab me an extra foil pan before I start my first cook today.

I guess I'll try setting the min & max to 325° & 375° since I'll be making the high heat brisket today.
