pretty self explanatory, in the market for new knives, and I think i've narrowed it down to this.


Another question I had is concerning the sharpening. Given the 80/20 breakdown of the blades, I've been searching exhaustively to see if they require any different method of sharpening, or if it's "simply" still the 15-20 degree angle on a whetstone?

Any info. would be solid... thanks guys.
 
With an 80/20 sharpening is different because you need to use a different angle for each side. If you use whetstones and angle by hand, you will have no problems.

As far as your choice, I like both company's knives. Which knives are you specifically looking at?
 
Both good. In these cases, imo, it's a matter of handle feel and balance.

I love my Shuns.

I have the D handle w/ angles models and they fits my hand perfect. Even if they weren't great blades, I would love them for the comfort.

Thanks a log guys. Now have have a tough decision, but I can rest assured that either way I can't go wrong.

find a place that will let you test drive them. A knife is one thing I do not recommend ordering online.

With blade qualities being comparable, it really does come down to the handle, and the balance, heft, and geometry of the blade. These are things that you have to feel for yourself.
