Maryland Pit Beef Question?


 
Odd I found this thread. I bought COOKS Illustrated Grilling today, and saw they had a recipe for this in it, and I made it today. I was MOST impressed...In fact..it was awesome! Followed the recipe verbatim. MAn....I got a new fav.
 
Your new cook looks even better. I wouldn't change a thing. The rub you use sounds great. As I mentioned before, I used on that was heavy on the cumin and did not like that one bit. Yours sounds better. And no need to char anymore.

In my opinion, yours looks perfect and I would pay to eat it. And I prefer the homemade horsey sauce you mention over plain horesradish.
