Marinades and Brines

Here is something that I have learned, that I really think needs to be passed on, regarding new marinades and brines.
I have found that by using chicken thighs, I can try new marinades and brines and rubs for a small cost. By keeping a few frozen packs in the freezer, I utilize cooker space and heat by filling out my cook with something new that I have been meaning to try. It requires a bit of forethought, removing a few thighs and letting them defrost, but to me, well worth the added minimum effort.
By doing this, it saves the expense of trying something new on a whole chicken or turkey, and it gives me more tries at tweaking, certain rubs and marinades.
The added bonus to this method is that you become a pretty darned good chicken thigh cooker, which I find delicious.
