Good to see you again! Hope all is well!

This is my kind of post. I have a very close friend from the Bayou who has traded me his homebrewed Cajun recipes for advice on how to smoke and use his WSM.

So, I will "spill my guts"....all of his recipes and then a couple others. I am quite confident in saying these are the BEST Cajun recipes I have ever made or tasted...a tall order, but I have tasted so many over the years that simply don't come close to comparing with these.

See my post under Recipes for Emeril's Andouille Sausage recipe. I'm not a true southerner I was born way far south for that, but I like it.
