My neighbor gave me some oak and hickory logs today that I split up into smaller chunks. I haven't cooked with any of them yet, but have noticed that many recipes on this board call for oak, but I haven't seen much with maple. Is maple a good choice for smoking? If so, does anybody have any suggestions on what to use it with. Thanks.

Matt

Maple works just fine. It is not as strong as hickory, but does a good job on just about anything. I prefer eastern hard maple, but soft maple is good, too. There is a lot of red maple (soft) around here, and I use it with good results. Don't forget about box elder - it's maple, too!

Good morning Matt:
I've never used maple as a raw smoking wood but have burnt-up many bags of maple charwood (lump). I've found it to have a most mild and semi-sweet flavor and have used it 'stand-alone' with very satisfying results.
