Made some of Bob's Bacon

Followed the man, the myth, the legend Bob's Bacon Made Easy recipe. I love getting to make recipes from great people from this community!
After a 14 day cure in the fridge this got a good cold water wash last night and back in the fridge until after the Arsenal game today and then it went on the kettle using the Aura Kettle Zone System and a snake with pecan wood.

Smoked between 170 and 190 for just under 4 hours until they hit 145.

After being in the freezer for an hour hand sliced.

I got 6 freezer bags. Two were used tonight for Bacon Turkey clubs. The bacon was outstanding. This is aways the best bacon!
 
Looks amazing! Is it better to go the 14 days for curing, rather than the usual 7 days?
The 14 days was because I got a sick last weekend and wasn't able to smoke it until this weekend. I wasn't worried about the 14 days but it was also not the original plans.

In times past I have uses this recipe and gone 7 days, 10 days, and 14 days and haven't noticed much of a difference. I was worried about it being too salty so I just really made sure I did a long cold water wash on both pieces the night before. Turned out prefect.
