I was recently blessed with a new Hasty Bake cooker for my birthday, and Hasty Bake recommends using their own lump charcoal. So, I now have several 10 lb bags of it. It seems to be of good quality, and reasonably priced ($3.99/10 lb bag. Is this good?)

So now I want to fire up my WSM with it, and I want to cook a brisket overnight. I know lump burns faster, so do you think I'll have trouble getting a long overnight burn? I know it also burns hotter, and I'm considering going panless so I can choke down the vents and let the charcoal burn slowly, since I'm not heating the water.

But, I'd rather use water in the pan. What do you think?
