LOW temperature (for sausage making) smoking on the WSM

I'm wondering if anyone has experience using the WSM to do low temperature smoking (130-165) of sausage. I've got an electric smoker, but haven't been happy with the results so I'm hoping to switch to the WSM if it can be done.

yes, I've done a couple of low temp bacon smokes on my 18.5. Just use less charcoal. I use a old stainless steel colander instead of the standard charcoal ring. I use the standard Minion method with about 8-10 lit briquettes. I can dial it in at 150 no problem and them open up all the vents too 200 to finish. works great.

I've done this several times as well. A few bricks, some wood, and you can smok ultralow. You can finish the sausages in the oven if you find that easier than raising the temps on the WSM at the end.
