Hello everyone.
I've had my WSM since the latter part of June and love it. At that time my step-daughter and son-in-law came up from Texas and I was in charge of doin' some Q for 35-40 people in Portland, OR. The night before I put four rolled-up racks of ribs on each level. Wonderful. The next day I used wrapped firebrick set on the bottom rack to cook three levels of chicken. Got those done, then switched the top rack to fresh salmon my father-in-law caught. The aroma from the WSM caused people to come out of the woodwork in the neighborhood and I was the BBQ genius.
Not bad for a rookie. The WSM has made it virtually impossible for me to screw things up.
In my next post I'll have aome questions. I just wanted to say, "Hello!" and mention that I'm very happy with my WSM. Plus, I'm excited about getting hooked up here.
