Lost Taylor Thermometer, but who cares!

Haven't posted in awhile got a newborn in the house.

So this past weekend I fired up the WSM to cook pork shoulder. I couldn't find my Taylor candy thermometer

so I was flying blind. And you know what, I didn't need it. Had the vents set to about 1/4 for all three and let it ride all day.

Results, simply delicious. Tender, smoky, porky, hmmm. BTW: I used Steven Raichlen's Java rub from "How to Grill". IMHO the java rub was made for pork.

This is what I love about the WSM, its so easy to use and once you get your own process down things get predictable.
 
You know Darryl cooking by feel and touch is the best way to cook, congrats on your successful cook.
 
Congrats on the good cook! Feels good to pulll off a good one.

I've gotten to the point where at home I'll glance at the lid thermometer and if it's anywhere in that gray "Smoke" zone then it's about right. 5-10 degrees either way is close enough for Rock&Roll.

I do the same thing, Russ. If it's in that gray zone, it's good enough for me.

Congrats on the successful cook, Darryl! Is this newborn your first child? Congrats on that too, in any case.
