Looking for recipe for pepperettes on bullet?

The most well none name brands I can think of are Slim Jim and Hot rod. But to better explain, what they are is a dried meet stick with some spices in them kind of like a miniature pepperoni or sausage. Here in Ontario some convenience stores carry a brand called cowboy pepperettes and they are smoky, greasy, and so so good.

This might seem dumb but I am going to answer my own question. I found this web site there are a lot of smoked sausage recipes including recipes for slim Jims. I have never left a link to a web site on the internet before I hope it works.

Alex, I follow you now. Essentially you're looking for what I'd call a pepperoni recipe. They can either be all beef or a combo of beef and pork. Here's a link to get you started. I've never made sausage in casings; just the bulk, fresh style. I think the 'slim jim' variety goes through a drying stage also. Slim Jim

What you are looking for is a snack stick recipe, which is cold smoked with a cure included in the seasoning. I Googled it for you and most of the sausage making suppliers have kits:
