Ok, I'm heading out town to see my parents, I'm taking some Tri Tip to cook on saturday. tri tip is not popular in these parts but can be had before it's either ground up in burger or used in kabobs. I've only cooked tri one time on a kettle after doing ribs, Dad has a Weber gas grill, should I pack my kettle or my wsm 18 or see what happens on dads gasser?

Go with the Kettle. Around here in Southern California, we are used to 'Santa Maria Style Tri Tip'. I leave the entire fat cap on it. If you Google it you will find all kinds of information about it. I have done my share of Santa Maria Style Tri tip over the past 1.5 years, and I go back to the simple ways. Just use Salt, pepper, and Garlic Powder (not Garlic Salt) on it, let it sit for an hour inside, fire up and set up your weber Kettle indirect, sear each side of the 7-7 minutes over direct fire, than cook it indirect for 45 minutes to an hour at 275-300 Degrees (everyone in my family likes it well done so I go up to about 1hour 15 minutes). Pull it off the kettle, foil it, and let it rest for 5-8 minutes, get it out of the foil and rest it for a few additional minutes, then cut it against the grain. It is simple and amazingly tasty.

On the occasion when I am really rushed for time, I have successfully done tri-tip on my gasser. Just salt, pepper, and garlic powder and cook direct til done to your liking.
