Hi All,

Preparing a pork butt Saturday for a crowd that is not big on barbecue sauce. I'm going to be mopping the butt with either a simple apple juice mixture or a spicy beer mop from Paul Kirk's book. Anyways, does anyone simply apply more mop to the pulled pork before serving to give it a little more flavor? Any ideas for any other light flavorizers I could slap on?...I just can't stand the thought of plain pork. Also, a strong vinegar base won't go with this crowd either. Thanks in advance!

The most common method is to mix in some of your rub after you have finished pulling. I usually sprinkle heavily, mix, and repeat.

What Mark said and then add any sauce that you, your family and friends enjoy and mix in well. If you are going to have a number of sauces there, just have them on the side and let the folks add what they want.
