Basically you can use any dryish stir-fry or you can do very thin grilled Korean Beef with Kim Chi and garlic pieces. It is a great dish to do with your wok on a performer. Drop the Lettuce cups into ice-water to firm them up before serving.
This recipe is the most exact you'll find. The only thing I do that's not in the recipe is to pour some rice vinegar over the minced chicken for about 20-30 minutes to make it really tender (I do this every time I stir-fry meat), the rice vinegar is mild and won't alter the taste after cooking. I love lettuce wraps, too!
BTW, you probably know this, but Pei Wei and PF Chang's have identical food, Pei Wei is just more of a 'diner' atmosphere (and cheaper).
