Has anyone done a sand MM with all vents 100% open? I am doing two whole chickens and since most of you all recomend those higher temps, I thought I would experiment with just letting it fly. At 50 minutes the temp at the top grate is 296. Sounds about right.
 
70 minutes=306*
90 minutes=313*
125 min =318*
Minion Method with/for wings. This not the same as holding 325 but pretty simple way to cook.
 
The birds took 2 hours and 40 minutes.
They were excellent!

This is as easy as it gets. The highest temp was 320*. If you want to follow poultry cook with an overnight butt, I recommend it.
