Let’s make some tri tips (and some chicken)


 
The tri-tips look great! When I lived in Reno, I reverse seared them on my 22" Weber Kettle - never knew the concept of "live fire cooking"!

Unfortunately, I think it will be very hard to find tri-tips here in Florida, so I will have to turn to other cuts of beef. We will finally be moving into our new house at the end of May - and then I get to buy my WSK! I can't wait!

Authentic Santa Maria TT is cooked over live red oak. The crust is spectacular.

Ask around locally for TT. You might be surprised. And you could ask your Costco butcher if they can bring in some cryovacs. They might have it on their order list.
