Leftover Rib Roast Questions

I just pulled my first rib roast off the wsm and it smells fantastic, I cant wait. But I know darn well my wife and i will not put much of a dent in it. Any ideas as to good ways to save the leftovers? I have a foodsaver. Also, wondering about reheating.

You can gently reheat it in the microwave on 40-50% power, or let the leftover come up to room temp and heat under the broiler for about a min on each side and let rest for a few min if it's in steak form, and if it was not cooked too much. If you cooked it to medium or above, like I do, I like to make cold beef sammies out of it with Hellmann's mayo, horseradish, and some cooper sharp cheese or a good american cheese like Clearfield or New Yorker.

I cut as I go, so for leftovers I usually slice a piece off and some salt + pepper and in the pan on both sides for a few minutes. This reheats and gives me a nice crust. If you're looking to avoid the crust I would go with a low heat in the oven for a gentle reheat.
