Leaving the gas behind

Hey All

I'm Jason from Philadelphia. Although I am new to the forums, I am not new to grilling, BBQ, or smoking. I've been grilling since I was a young teen and I'm 27 now. I have actually attended culinary school which gives me some advantages. I grew up using gas as that's how I was taught. Over the past 6 years, I've become a convert to charcoal. Oh the happiness that came with it. MY first charcoal grill was a weber 22.5" kettle. This weekend, I've added my 18.5" smokey mountain to the lineup. I've also gotten rid of the 4 burner gas grill since all I used it for recently was to light the chimney! I've been pretty successful in making ribs and pulled pork on the kettle. I had to spend way too much time tending to the fire and temperatures on the kettle - Which is why the WSM was purchased! I spent a good part of today playing around getting a feel for it and the vents. I was rather impressed with how well the unit functioned. I look forward to contributing and sharing my success and failures(hopefully not failures).
 
Welcome Jason. Gasers make great tables to put stuff on while your grilling or smoking with the charcoal.
 
As a long time gasser myself, I'm also in love with the charcoal cooking and use the gas grill as a table & wind block more than anything. :) Welcome...
 
Welcome Jason. If your experiences are anything like mine have been....even your "failures" will be pretty good eating.....
 
Thanks All! First up to cook this weekend will be some ribs and chicken. I may throw some burgers and dogs on so I dont have to light the grill also. I'll be posting afterwords!
 
Welcome aboard Jason. My gasser is for my wife's meal because she likes everything plain. Although she said the charcoal with the filets was the best I made her so far.
