Cooked this fellow this weekend. The offspring including my granddaughter are in town for my birthday which happens to fall on Labor Day this year.
First cook in almost a year.
Took about 14 hours. Came out black as night(too much smoke maybe). Tasted well and was moist and tender. Used this recipe for the rub. Always had good luck with it. Basted with apple juice and didn't wrap it until it came off and was put into the cooler.
The Auber fluctuated like crazy. Started out stable but by the next morning it was running between 210 and 260. At one point I changed it to run in on/off mode with no change. My probe had a short in it so I’m thinking that might be it.
Anyway it was done in time and tasted good.
