Kosher Turkey

Hi all,

I was wondering what your thoughts on buying a kosher turkey rather than brining a natural bird. Last year for Thanksgiving, I followed the Good Eats recipe with a natural bird and it came out great! This year I'm going to do the turkey on my new WSM, but I haven't decided to brine it, or just buy a kosher bird. The apple brined turkey recipe sounds really good, but you shouldn't brine a kosher bird, right?

That is correct. A kosher bird has already been soaked in saltwater.
