Kentucky Derby Chocolate Walnut Pie

The posts of pecan pie recipes reminded me of this recipe.

No, it's not a version of pecan pie, but still worth the effort.

A late great friend of mine who grew up in Kentucky (RIP, David) told me of this pie many years ago, and it's been a favorite of my family since the first time we made it those many years ago.

Kentucky Derby Chocolate Walnut Pie

1/2 cup all-purpose flour
1 cup granulated sugar
2 large eggs, lightly beaten
1/2 cup butter, melted and cooled*
2 tablespoons Kentucky bourbon
1 cup chopped walnuts
1 1/4 cups semisweet chocolate chips
1 teaspoon vanilla extract
1 pinch salt
1 ready-made deep dish pie crust (for a 9-inch deep dish pie)

Preheat oven to 350 F.
Combine the flour and sugar in a mixing bowl.
Add the eggs and melted & cooled* butter to the flour/sugar mixture and stir to combine.
Stir in the bourbon, walnuts, chocolate chips, vanilla, and salt.
Pour the mixture into the unbaked pie crust.
Bake for 40 to 45 minutes, or until the filling is set.
Test filling near the middle with a toothpick; if the toothpick comes out damp, bake for a five to ten more minutes.
Place pie on a wire rack until cooled completely before cutting and serving.
Whipped cream, or even a scoop of vanilla ice cream goes great on this pie.

*Make sure the butter is cool (near room temperature) before combining with the other ingredients, particularly the eggs, or things will start to cook prematurely.
