Keeping butts warm?

Hi everyone, I put two 8 lb. butts in the WSM last night at 8:00 figuring they would be ready about noon today. Temps were stable at the lid at 235 when I went to bed at about 11:00. When I woke up at 5:00 a.m. the water pan was dry and temp. was 270. One butt was at 185 and the other at 190. Added water and stabilized the smoker at 225. It's now 7:00 and these butts are ready to come off. How can I hold these butts till about 2:00 p.m. when I want to pull them. If I wrap them in foil and put them in a warm oven will they dry out. Any help would be appreciated.

Hello Mike. Wrap with foil, then with old newspaper, then I use an old blanket or towels, stuff all of it in a dry cooler and it will hold for 5 or 6 hours.

Dale, Thank's for the quick reply. That's what I would normally do, however I'm concerned they wouldn't hold for the 7 hrs. that I need. Thinking about it, we have a ceramic stone that you heat in the oven and place in the bottom of a biscuit basket to keep the biscuits warm. I think that may help as well. ,Mike

I cant tell you that the meat would be safe after 7 hours because I dont know if you have a quality cooler, or if you are fast as I am placing 195 degree meat into said cooler.

I would trust it for that long of time if the lid was taped shut to keep people from peeking in on your success.

My cooler is new and pretty good. I've got it half full of hot water to heat it up. The biscuit stone is hot and sitting in a warm oven ready to go. I've got two towels in the dryer heating up right now. Surprisingly the butts are now only at 195. Maybe my instant read is messed up. I'm gonna crumple a bunch of newspaper, line the bottom of the cooler with it and the stone. Wrap the butts with foil and the towels to go on top, add more crumpled newspaper to top the cooler off and tape it shut. I probably can't get it done as fast as you, but I'm going for it!

Let us know how things went. enjoy my fellow smoker brother.

Well, I took the butts off about 9:15 a.m. When I unwrapped them at about 3:45 p.m. they were much too hot to handle. Pulled the meat and served with a variety of sauces. The pork was delicious! Thanks again Dale. I thought the cooler would work but I needed to hear that from somebody more experienced than I am. And Terp, thanks for your kind thoughts.

, Mike
