What type of wood should I use with different meats? I know it is probably a matter of taste but what do you guys like best? Are some wood types better than others for certain types of cooking? Thanks in advance!!
 
Bob, my recomendation would be to start with a 'mild' wood. Apple or cherry would make good choices. Use about 1/2 the amount of wood that most recipes call for. Getting started, it is easy to oversmoke. Much better to under smoke and enjoy rather than over smoke....
