Was going to do some PP, but Brisket was on good sale so I went with that. Went to fire up the WSM and found my guru wouldn't turn on. First cook with Lump as well. First time to use an electric charcoal starter (10 minutes to Minion!).
I forgot to add water to the pan (guru, so I've been just doing foil), had to adjust the WSM for level (in a bed of small rocks). Didn't get enough time for the brisket to sit with rub. Wish'd I'd gotten a butt anyways to do BoB. I'll survive, of course--the S.O. prefers something a bit 'healthier' so I'm going to be doing 3 Birds tomorrow as well.
