Joe's Barbecue Sauce

Joe's Barbecue Sauce

1 TB. vegetable oil
1 small onion, coarsely chopped
2 cups catsup
1/2 cup light molasses
1/4 cup cider vinegar
1/4 cup Dijon mustard
1 1/2 tsp. fresh lemon juice
1 tsp. hickory flavor liquid smoke (optional)
1 tsp. garlic powder
1/2 tsp. cayenne pepper
1/4 tsp. hot pepper sauce (such as Tabasco)
3 pinches of ground allspice

Heat oil in heavy medium skillet over medium-high heat. Add onion and cook until translucent, stirring occasionally, about 8 minutes. Add
all remaining ingredients and simmer until thickened, stirring frequently, about 15 minutes. (Can be prepared ahead. Cover and chill 3 days or
freeze for 6 months.) Makes 3 cups.
