Jim,I need advise on the double smoked ham recipe.I'm trying this for the first time for xmas.I was wondering if it is fine to inject the ham the night before?or do I need to wait?How long before I throw it on the WSM Should I wait?If I need to wait tell the morning to inject can I mix it up tonight?Thx for the advice.
 
Thanks for your time Jim,Does 30-40 min. at 225-250 sound right?I'm new to this so....Ohh I have a hillshire farm pre smoked.By the way good xmas bbq show on food channel right know.merry Xmas.
