Jalapenos Galore

OK I've been very busy, working close to 6 days a week since Ike. Ike blew down 2 jalapeno plants and I just ignored them. Well I go out back this morning and harvest the biggest jalapenos I've ever grown. I took the biggest peppers (28 whole peppers ) and made ABTs out of them, what should I do with the other 2.75 lbs of them? I can dry some but there has got to be other uses for them.
 
Smoke em up and you have Chipotles.

You can pickle them whole or sliced. You can make pepper relish and pepper jelly which will go good with black eyed peas. Perfect for new years meal.
 
I agree with Bryan...smoke 'em. The last time I had an end of season pile of jalapenos, they were smoked and enjoyed for months.
 
I don't know why I didn't think of pickling them. So, dry some, smoke some and pickle the rest, works for me, thanks!
 
I love roasted peppers. What kind of wood do you use to smoke them and how long does it take? Is it like roasting them only for a longer period of time? It sounds very Yummy.
 
Dave, I have thrown the peppers on after a cook and left overnight-low heat. They came out pretty black...you may get a better result with a more controlled smoke time and temp.

I've used hickory on habs and been happy ... I got some pictures and a thread somewhere, I'll look it up ...

Wasn't much info in it, I forget what temp I did them at ... ran a small fire for about 16 hours by the looks of it, I'll check the notes ... gonna have to do it again soon anyway, I'm down to my last couple ... might as well do it while it's cold and easy to low temp smoke them. Here's pics:

so, do them on pizza screens or the like, a few of mine ended up in the water pan


knowing what I know now, to do it again I'd probably cold smoke them for 4 hours or so then finish in the oven or a dehydrator
 
I'll be drying & smoking some tonight, but what about pickling. There are a lot of recipes out there but ghey all differ somewhat.
