You don't say how big they are. Five pound butt or fourteen pound butts? Same with the brisket.

need a little more information Rick. how big are your butts and brisket (after trimming off fat)? a rough estimate should be 1.5-2 hours of cooking per pound, therefore if the butt weighs 7 lbs, it should take you a total of 10.5-14 hours cook time. A full brisket should take roughly 12-18 hours to cook.
