Italian Sausage Stuffed Zucchini Boats

6 cucumber size zucchini
2 tbsp. chopped onion
1 lb. Italian sausage (bulk type) or home made
1/2 c. bread crumbs
1/2 c,. grated Mozzarella cheese
2 eggs beaten or egg sub.
Dried parsley I used fresh
Salt and pepper to taste
1/2 to 3/4 tsp. fresh basil (I like a lot)
2 tbsp. butter
1/2 c Parmesan cheese grated
16oz. can Ragu spaghetti sauce. ( I used Rich's home made sauce)

Scrub and cut off ends of zucchini and cook in boiling water for about 7minutes.
I used a home grown zucchini which was large and boiled it for 10 minutes.
Cut in half lengthwise, scoop out pulp leaving shell.
Brown sausage and onion and spoon off fat. Mix with next 6 ingredients and the pulp. Pile in shells in baking dish and dot each one with butter and Parmesan. Cover with sauce. Bake at 350 direct heat for 30 minutes.

This is great and if your zucchini is large and can share one half and freeze the other. It works great and gives you another meal.
