The Great Lakes Barbecue Association will be sponsoring an "Introduction to Sausage Making" class on Saturday February 1, 2014, here are additional details:
When: Saturday, February 1, 2014
Time: 10:00 am until approximately 2:00 pm
Where: Holiday Inn Express
12150 Dixie Hwy, Birch Run, Mi. 48415
Cost: $20.00 for GLBBQA Members
$35.00 for Non-GLBBQA Members
As indicated above, this is a beginners class and Rich Tirpak, the instructor, has put together an outline including but not limited to:
Meats including Wild Game
Safety
Grinding info including different grinds
Types of Grinders
Stuffer Info
Types of Stuffers
Knives
Mixers
Casings
Curing Basics
Sausage
Jerky
Smoking Basics
The Instructor for the class is Rich Tirpak, Rich is a longtime GLBBQA member and is the founder and owner of Mad Hunky Meats, making his very own rubs and brines.
Rich has been involved in charcuterie for well over 20 years.
There will not be any actual smoking of the products at this class, however, sausages made during the class will be grilled
on a Weber grill for "quality control."
