Internal Meat Temp changes

I am currently smoking a 11 lbs brisket and a 7lbs porkbutt. My temps at dome has been about 250 consistly throughout the cook but my meat was at 180 for the brisket and 182 for the butt. I flipped the meat and for the past 2-3 hours both meats have been hovering about 165 +- 5 degress or so.

I plan on serving at 4 or 5.
