Interesting temperature experiment..

on new 18.5 WSM. Well, 4th smoke on it but got it 3 weeks ago. I have a thermo hanging in one of the top vents with a 5 inch probe, and I have a Polder digital that I stuck into a potato that is sitting on the top grill. Here's the fun part. The original WSM thermo is reading 210F, the one in the top vent is reading 250F and my digital one on the grate is reading 225F.
It's 50F today, raining and unusually cold.
So I'm going with my tater thermo for today. I've been reading about the wacky original thermo on these things but a 40F difference up top?

Anyway, 4 slabs of ribs on and I'm outside under my awning without a care in the world.

That's the spirit. The difference in temps doesn't mean all that much. I like to follow the grate temp with my digital. Good luck with the ribs!

The temps you're reporting are typical...and each one is accurate!

Here's the deal...each therm is indicating the correct temp for where it is located.

The same thing happens in one's home...the thermostat says one thing, a thermometer set in the room getting the most sun says another, an upstairs room another, etc., etc.,....and one's home is insulated!

...I just use the installed Weber dome therm, anywhere in the shaded smoking range is close enuf

The important thing is that the difference between your WSM thermometer and your grate level Polder is consistent. If it is and you can add and subtract, after a few cooks the WSM thermometer will be all you need. If it's not, maybe a call to Weber customer service is in order.

Gotta agree with your take on cooking in the rain under an enclosure. Very peaceful.

A man with one watch knows what time it is. A man with two watches is never sure.
 
Thanks for all your replies. By the way my ribs were the best I have ever had, it's getting scary how good these ribs are coming out.

I'll stick with my grill thermo. Seemed to be the best thing for how I use my WSM
