Are there specific do's and don'ts of injecting a brisket? Usually with the butts I just let er rip with about 1 Cup and try to spread it out. Should injecting a brisket be different?
i just injected my first brisket last night. it's been on since 10 pm edt and it still have another hour or so of fight left in it so i can comment on the effect yet. i used a mixture of beef broth and rub and tried to inject the flat across the grain (like direction you'd slice it). we'll see if i get streaks or not.
Helps to massage the brisket a couple times after the injection to distribute the injection solution. That said I have had marks from time to time, but not recently. Good luck.
