Inconsistent Temps.

I have a flat on my WSM today. For some reason the barbecue gods are not with me . For some reason I am getting huge temp swings and have been adjusting the vents every half hour or so. Do these swings adversely affect the final product? Usually adjust the vents once or twice during the entire cook and everything turns out good.
 
Robert. Temp swings don't bother me that much, usually you are still within BBQ temps.
Go by the look and feel of the meat, that will tell you when it's truly tender and ready.:wsm:

Thank you so much for answering my question. At hour 3 the thing finally stabilized. Put the brisket in foil at 4 hours (167). Just took it off at 204 degrees, in towels, in a cooler. We'll see how it turns out. Smells great and I think it will be great. I was just a little worried about the temp swings since this has never happened. Based on the number of replies I guess it was a pretty stupid question. But I have relatives in town and you don't want to screw up when you have an audience!:)
 
Good for you rob, temp swings can be common due to all the variables in cooking with charcoal and wood. The wood becoming engulfed in flame at different times can also cause spikes
Also a couple of things I have found out for me. always know which way the prevailing breeze is coming from, regardless of how strong. have your dome vent and your loading door opposite that breeze. If you can't do that for some reason with the door put something in the way to block the direct breeze.
Bury your wood in the coals so they are not out on top in an oxygen rich environment. Or you can wrap the wood in aluminum foil with some small holes punched into it.
 
Good advice thanks. Like I said the WSM has always been a small tweak and then hours of solid temps. But everything turned out fine.
 
I'm guessing either wind or wood chunks lighting off. I always set my dome vent downwind, and close all the bottom vents except the downwind one to control temps. It's usually more stable that way.
