Ideas to consume brisket

I feel confident I can smoke this brisket flat, and can't wait to enjoy some slices. But wondering if folks do other things besides eating slices? What makes a good brisket sandwich?

4 Things come to mind
1) Chipotle Mayo
2) Horseradish or Horsey Sauce, get a bunch next time you go to Arbys.
3) Helmans
4) New Yorker American Cheese( not pre sliced)
When i make brisket sammies i use either 1&3,4 or 2&3,4. Usually 1&3,4
 
My bricket came out OK, but just OK. Good bark, good smoke ring, moist away from the ends. But seems a bit dull by itself eating slices. I'll use the recommendations given for sandwiches but wondering what I can do to perk up the slices a bit when eating them as a meal
